UCLBS Recipes

Karin's BBQ Salmon Marinade

This is an excellent marinade that keeps the salmon moist and will not
burn on the BBQ. The recipe comes from Nova Scotia (Lunenburg)

2 T. chopped (fresh) parsley
1 tsp. salt
1 T. grated onion
2 cloves garlic (chopped)
1/2 tsp. powdered mustard
1/4 paprika
3 drops tabasco sauce
1/4 cup legal ketchup
1/4 cup olive oil
3 T. fresh lemon juice
2 T. white vinegar

2 salmon fillets

Marinate fillets for 3 hours or more in fridge.

Place in BBQ basket (sprayed with oil) and cook for approx. 20-25 minutes (turning after about 15 min.)

Baste with remaining marinade
