T's Lemon Salad Dressing
Juice of one lemon
oil equal to 2 times the amount of lemon juice (use a light oil
like safflower)
1/2 tsp kosher salt
1/2 finely ground black or white pepper
legal dijon mustard (President's Choice is legal)
1 small clove crushed garlic
1/4 tsp honey
Place ingredients in a jar, seal (very important!) and shake well. The mustard not only adds flavor, but helps to keep the dressing homogenized.
